Microorganisms are living beings so small that they cannot be seen with the naked eye. They are everywhere around us - in the air, in water, in soil, and even inside us. Despite their tiny size, they play a fundamental role in our ecosystem and in food production. But how do they do that? Well, they have an incredible ability to transform simple substances into nutrients that we, humans, and other organisms need to survive.

Importance of Microorganisms in Food Production

Now, you may be wondering, "How are microorganisms involved in the production of the food I eat?" Well, microorganisms are used in many processes that transform our ingredients into delicious meals. For example, the yeast we use to make bread is a type of fungus, a type of microorganism. It feeds on the sugar in the dough and releases carbon dioxide, a gas that makes the bread rise. Another example is the bacteria used in yogurt production, which transform milk into a thicker consistency and add an acidic flavor.

Furthermore, microorganisms are also used in industrial processes for food production. For example, fermentation is a key process in the production of products like beer, wine, cheese, and pickles. And it doesn't stop there! They are also used in the production of medicines, in water purification, and in waste recycling.

What if I told you that you can learn to make some of these foods using the same microorganisms that are around us every day?

This hands-on project will allow us to explore in a fun and interactive way how microorganisms are involved in food production. In the end, you will have the opportunity to create your own experiment, supervised by our science experts, of course, and apply important concepts such as fermentation and the food chain. Practical Activity: "Exploring Microorganisms in Food Production"

Project Objective

The objective of this project is for students, in groups of 3 to 5, to carry out a practical experiment to understand how microorganisms act in food production, especially in fermentation. They will be tasked with creating a "Kitchen Laboratory" where they can monitor the growth of microorganisms and the fermentation process.

Detailed Project Description

Each group will be responsible for conducting two experiments: one with alcoholic fermentation, where they will ferment fruit juice and another with lactic fermentation, where they will make homemade yogurt. For each experiment, students will need to create a suitable environment for the growth of microorganisms and monitor the fermentation process.

Necessary Materials

  • For the alcoholic fermentation experiment:

    • 2 liters of grape juice (or other fruit juice without preservatives)
    • 1 packet of yeast
    • 1 birthday balloon
    • 1 funnel
    • 1 glass bottle with a lid
  • For the lactic fermentation experiment:

    • 1 liter of whole milk
    • 1 cup of natural yogurt (as a "starter" for the bacteria)
    • 1 kitchen thermometer
    • 1 saucepan
    • 1 glass bottle with a lid

Step by Step

  1. Alcoholic Fermentation:

    • Pour 1 liter of grape juice into the glass bottle.
    • Add half of the packet of yeast.
    • Seal the bottle with the balloon, securing it tightly with a rubber band.
    • Leave the bottle in a warm place and observe what happens over the days.
  2. Lactic Fermentation:

    • Heat the milk in the saucepan until it reaches a temperature of 40 to 45°C (use the thermometer to measure).
    • Pour the milk into the glass bottle.
    • Add the cup of natural yogurt.
    • Seal the bottle and wrap it in a cloth. Leave the bottle in a warm place for 8 to 12 hours.
    • After this time, open the bottle and observe what happened to the milk.
  3. Recording and Analysis:

    • Throughout the process, students should record their observations in a logbook, noting the changes that occur in the grape juice and milk.
    • After completing the experiments, students should discuss their observations as a group and compare alcoholic fermentation with lactic fermentation. They should then prepare a brief presentation for the class, sharing what they have learned.

Delivery Format

Students must submit the filled logbook, containing the observations made during the experiment, along with the oral presentation to the class. The presentation can be done creatively, using posters, drawings, models, or even a theatrical performance! Remember to explain clearly and simply what fermentation is, how it occurs, and what is the role of microorganisms in this process.
