Understanding the characteristics of these compounds, as well as the techniques for their production, analysis, and applications, can increase interest in this area of study and promote the development of technical and socio-emotional skills in students.

Organic salts are fascinating; their wide range of applications makes them an important area in organic chemistry. They are vital in the food industry, medicine, agriculture, and the creation of new materials. Understanding their properties and characteristics, as well as their production and uses, is essential for a sustainable society.

The Importance of Organic Salts

Organic salts play a significant variety of roles in our daily lives. Whether in the meals we eat daily or in the medications we take, they are necessary for our lives. These salts have a diversity of applications, such as food additives to enhance flavor or preserve food, in medicine as antacids or as nutritional supplements, and even in agriculture as additives to improve soil.

Furthermore, organic salts are used in the creation of new materials, with potential uses in sustainable technologies, such as solar cells and batteries. A deep understanding of organic salts can lead us to discoveries that contribute to a more sustainable future.

Activity: The Fascinating World of Organic Salts

Project Objective

This project aims to provide students with the practical experience of producing and analyzing a common organic salt: sodium acetate. Through this project, students will be able to understand the theory behind the formation of organic salts, their properties, and characteristics. Additionally, they will also apply concepts of thermodynamics and chemical kinetics, exploring how temperature and pressure affect the formation of salts. The project will also involve the study of related subjects, such as health, nutrition, and environmental preservation.

Detailed Project Description

The activity will be carried out in groups of 3 to 5 students. The total duration of the project will be approximately 16 hours, including preparation, execution, data analysis, and report writing.

1. Preparation of Organic Salt - Sodium Acetate

  • Source of organic salt: Vinegar (acetic acid) and sodium bicarbonate. Vinegar reacts with sodium bicarbonate to produce sodium acetate (CH3COONa), among other products.

2. Analysis of Organic Salt

  • Properties to be analyzed: pH, solubility, density, etc.

3. Study of the Applications of Organic Salt

  • Investigate the applications of sodium acetate in different sectors, such as food, medicine, agriculture, etc.

4. Environmental Impact

  • Study the environmental impact of the production and use of this organic salt.

Required Materials

  1. Vinegar
  2. Sodium bicarbonate
  3. Graduated cylinder or measuring cup
  4. Thermometer
  5. Scale
  6. Heat-resistant glass container
  7. Stove or other heat source
  8. pH analysis kit
  9. Internet/computer for research
  10. Paper and pen for taking notes and recording observations

Step by Step

Part 1: Preparation of Organic Salt

  1. Using the graduated cylinder or measuring cup, measure 200 mL of vinegar and 50g of sodium bicarbonate.
  2. In a heat-resistant glass container, add the vinegar and slowly add the sodium bicarbonate.
  3. Heat the mixture slowly until all the liquid has evaporated, leaving only the solid organic salt.
  4. Allow the solid to cool and solidify.

Part 2: Analysis of Organic Salt

  1. After the salt has cooled, measure and record its properties, including its consistency, color, smell, density, solubility, and pH.

Part 3: Research on Applications

  1. Research on the internet or reference books to learn about the various applications of sodium acetate.
  2. Discuss and record the research results.

Part 4: Environmental Impact

  1. Research and discuss the environmental impacts of the production and use of sodium acetate.
  2. Prepare a brief summary of the conclusions.

Project Deliverables and Written Report

Students must prepare a written report of the project, where they must include the following sections:

  1. Introduction: Contextualization of the theme, relevance of organic salts, project objectives, and a brief description of the activities carried out.
  2. Development: Detailed discussion of the theory behind the formation of organic salts, the reaction between vinegar and sodium bicarbonate, the thermodynamics and kinetics involved, the properties and characteristics of sodium acetate, and its applications in various areas.
  3. Conclusions: A synthesis of the results obtained, including the properties of the organic salt produced, its applications, and environmental impact. In addition, students should discuss what they learned from the experience, including technical and socio-emotional skills.
  4. Bibliography used: References of the materials and sources used for research and project implementation.
